When I first started my journey to better health, one of my biggest challenges was overcoming how out of place I felt in the kitchen. If you’ve ever watched one of my cooking videos, you’ll know I call it my “kitchen of chaos” for a reason. Luckily, with easy recipes like this one even the most inexperienced of us can enjoy a bowl of hearty goodness.

1 cucumber, finely cubed
1 cup hemp seeds
2 tbsp honey*
1 onion, chopped
1 tsp lemon zest
1/4 cup lemon juice
2 cups water
1 1/2 tsp turmeric powder
3 tbsp fresh ginger root, finely chopped
Pinch of cayenne pepper
Black pepper and garlic, to taste
* The video recipe uses hemp oil, but for those of us who are SOS-free, I recommend trying it without the oil or substituting with honey instead
First prep your cucumber, onion, ginger root, and lemon zest.
Pour the hemp seeds into your food processor and add honey (or dash of water), then blend until seeds are grounded up.
Add the onion, lemon zest, lemon juice, water, turmeric powder, ginger root and cayenne pepper. Blend until you reach a smooth consistency.
Pour soup into a bowl and mix in cucumber. Add black pepper and garlic to taste.
P.S. Though this soup is served cold, it can also be served warm. Just pour the soup into a saucepan and stir frequently on low heat until hot to the touch.
